Corn Chilly is a popular Indo-Chinese snack that perfectly blends the sweetness of corn with the heat of chillies and the tang of soy-based sauces. Here’s a simple recipe to make Corn Chilly at home with easily available ingredients.
Ingredients:
For the Corn Fritters:
●   2 cups sweet corn kernels (boiled or frozen)



●   4 tablespoons cornflour


●   2 tablespoons all-purpose flour (maida)

●   1 teaspoon ginger-garlic paste

●   Salt to taste

●   Black pepper to taste

●   Oil for deep frying

For the Sauce:
●   1 tablespoon oil

●   1 tablespoon chopped garlic

●   1 tablespoon chopped ginger

●   1 green chilli, finely chopped (adjust to taste)

●   1 small onion, diced

●   1 small capsicum (green bell pepper), diced

●   2 tablespoons soy sauce

●   1 tablespoon red chilli sauce

●   1 tablespoon tomato ketchup

●   1 teaspoon vinegar

●   1 teaspoon cornflour mixed in 2 tablespoons water (for thickening)

●   Spring onions for garnish

Method:
Step 1: Preparing the Corn Fritters
1.   Boil the corn kernels if using fresh corn. If using frozen corn, thaw and drain them completely.

2.   In a mixing bowl, combine corn, cornflour, all-purpose flour, ginger-garlic paste, salt, and pepper. Mix well to coat the corn.

3.   Heat oil in a deep frying pan. Once hot, drop spoonfuls of the coated corn mixture into the oil and fry until golden brown and crispy.

4.   Remove and drain on absorbent paper. Set aside.

Step 2: Making the Sauce
1.   In a wok or a large pan, heat 1 tablespoon of oil.

2.   Add chopped garlic, ginger, and green chilli. Sauté until aromatic.

3.   Add diced onions and capsicum. Cook for a minute or two on high flame until slightly tender but still crisp.

4.   Add soy sauce, chilli sauce, tomato ketchup, and vinegar. Stir well.

5.   Add the cornflour slurry and cook until the sauce thickens slightly.

Step 3: Combining Everything
1.   Toss the fried corn into the sauce mixture. Mix well to coat all the kernels evenly.

2.   Cook for a minute on medium flame. Do not overcook, or the corn will lose its crunch.

Step 4: Garnishing and Serving
1.   Garnish with freshly chopped spring onions.

2.   Serve hot as an appetizer or a side dish.

Tips:
●   Adjust the amount of chilli sauce according to your spice preference.

●   For extra crunch, you can double-fry the corn fritters.

●   Adding a few sesame seeds on top before serving adds a nice touch and extra flavor.
